We keep the bone on to retain all the natural succulence found only in traditional, hickory smoked hams. Then a ''fire glazing" seals in all the natural juices, a process we've developed using our own blend of brown sugar and honey, Finally, we vacuum seal each ham to draw the flavor of our special glaze deep into the ham.
